Healthy Shamrock Shake
Sometimes the idea of making your carbon footprint smaller can be daunting. The environment is a hot issue right now — and it’s something I’m always thinking about. There are many issues, and you have to wonder: Can one person’s actions even make a difference? I’ve learned that the answer is yes. Yes, I can make a difference. While donating millions of dollars to an environmental cause isn’t realistic for me, I can make a difference when I go to the grocery store.
I go to the grocery store at least three times a week, and this is where I can make informed, educated decisions about the type of packaging the products I buy are in. This is why I choose cartons when I can — because they are recyclable, renewable and reliable. In fact, cartons are made with more than 75 percent paper, which comes from a renewable resource: trees — harvested using responsible forestry practices.
So, to make an impact in your community, try to purchase products that are recyclable and have clean packaging, helping to reduce exposure to undesirable chemicals. It’s that easy.
Do you know what else is easy? Making this delicious Healthy Shamrock Shake. We’ve whipped up a healthier version of your favorite green shake. All you need is a blender and a few ingredients. I have been on a serious mint kick lately, so this shake is one of my favorites. It’s so refreshing! I’ve used Silk® Unsweetened Almondmilk in this shake because it is my favorite non-dairy milk product from a carton — and you can’t beat the price.
½ cup non-dairy milk (I used Silk® Unsweetened Almondmilk)
1 heaping cup spinach, fresh
1.5 cups vanilla frozen yogurt
8 mint leaves
⅛ teaspoon peppermint extract
Chocolate chips and mint leaves (optional)
- Place almondmilk (or non-dairy milk) and spinach into a blender. Blend on high until chunks of spinach are not visible and liquid has turned green.
- Add remaining ingredients. Blend until smooth.
- Garnish with chocolate chips and a sprig of mint, if desired.
